Ok, let’s start with the COS’s most “out-of-place wine”. An equal Cabernet Sauvignon and Merlot split (sometimes up to 1% Frappato). Blind, the Bordeaux blend is not obvious at all. Also, true to COS’s style – neither is the southern origin. Pop and poor and you can get some herbal, rubbery notes mixed with dark juicy berry which could suggest Cabernet. However, let it breath for 3-6 min and the nose takes you more towards a Rosso di Montalcino. Soft, creamy, cherry (and some green brush residue)….
