A clean, mineral and crunchy crisp Assyrtiko from one of Santorini”s new-wave majors. A mix of modern and traditional approaches puts plenty of new oak and acacia of various sizes alongside wild yeasts and no temperature control at fermentation. Enough oak to balance out the acidity, but less than would make itself intrusive. Very good.
