Aged in oak for 6 months, this Assyrtiko definitely gained a new dimension. Light amber in color, it is much rounder and succulent on the palate than its steel-kept brethren, with enough acidity remaining to keep it fresh. Interesting, but not the easiest of drinks. Barrel aging quite possibly made it a bit too big and toasty.

Interesting small scale (27 bot) biodynamic cru Assyrtiko production. Skin contact for 12 hrs, 8 months on lees and no filtration. The outcome is interesting. Some body to throw around. Round, ripe white fruit and yeasty notes. Good vibrancy. Very round, clean and fresh. Needs time to breathe.

Cru production of 2,700 btls in total. Pale and flat early on, it gains with time and air. Underripe berry morphs into white fruit, keeping all that sun and 15% locked up. Typical pickled apples peek out, but overall it fares nicely.
